Sloppy Joes



It doesn't get easier than this (well.....maybe the leftovers are easier!). There are so many different ways to make and serve this recipe. Obviously, the buns are OUT for those of us that are strict (or even partial) Paleo, but serving this on a bed of romaine lettuce with tomato slices is an incredible meal. You can add some heat to this by adding jalapeno peppers. My version is light on heat, since the kids aren't likely to eat it if it requires gulps of water in between bites - play around with your choice of seasoning.

2 lbs grassfed beef (turkey works well also)
1 onion
1 green or red pepper
4 cloves garlic
2 cups tomato puree
2 tblsp cocoa powder
1 tblsp chili powder
1 tsp cumin
1/2 tsp yellow mustard powder
1/2 tsp freshly ground pepper


Sautee beef, onion, green pepper and garlic until beef is browned (10-15 minutes). Add rest of ingredients, stir well and simmer for another 10-15 minutes. Serve over a bed of lettuce or choice vegetables.
