Curry Chicken
3-4 lbs free range organic chicken thighs
1 bag baby carrots
1 can coconut milk
curry
ground turmeric
cinnamon
garlic powder
sea salt
Place chicken thighs into a crockpot. Mix together all the seasonings. How much of each depends on personal taste and I don't measure, but I would say 1 tsp of each seasoning except cinnamon (about 1/2 tsp) and sea salt (about 1/4 tsp). Again, play around with the flavoring.
Dump the mixed seasonings over the chicken thighs and stir around to get the thighs completely covered with the seasonings. Pour coconut milk over thighs and top with carrots. Cook all day on low or on high for 4-6 hours (whatever is more convenient).
