Homemade Breakfast Sausage

Do you enjoy sausage for breakfast, but not the problematic additives, fillers or nitrates that are commonly used in the sausage you buy at your local grocery store? Here's an easy recipe that is easy to follow and delicious!

1 lb ground turkey or lean pork
1 tsp onion powder or 1 T onion flakes
1/4 tsp each cumin, black pepper, nutmeg, oregano, red pepper flakes, and ground ginger
1-1/2 tsp poultry seasoning (or 1/2 tsp each dried basil, thyme, and sage)
1-1/2 tsp sea salt
1 egg, lightly beaten

Mix all ingredients together and chill for at least an hour to let the flavors meld. Form it into patties and saute until nicely browned on both sides. If you use turkey you might need to grease the pan a little, but if you use pork it should produce enough of its own fat.

  1. Maria,
I made this for breakfast today. Big hit, I didn't have all the ingredients, and added a little to much red pepper flakes. I was really suprised at the "sausage" flavor it had. I used ground turkey. Good stuff thank you.

  2. Maria,
We love sausage at our house but I was a little skeptical about making my own. These were great! We liked them so much that we've had them twice already. Thanks for a great recipe.

  3. Sara,
I hear that often - people a bit timid about making their own sausage. I'm glad you gave it a try. It's easy and so good!
