Prosciutto-Wrapped Shrimp Scampi
This is an easy dish and a favorite of ours.
12 uncooked jumbo shrimp, peeled deveined
1/2 c dry white wine
1/4 c olive oil
2-4 garlic cloves depending on taste
1/4 teaspoon crushed red pepper
thinly sliced prosciutto, each slice cut lengthwise in half, then crosswise in half
2 tblsp minced italian parsley
lemon wedges
Combine shrimp, wine, oil, garlic and pepper in bowl; toss to coat. Let stand at room temperature 1 hour.
Preheat broiler
Drain shrimp, reserving marinade. Wrap 1 prosciutto strip around each shrimp. You can skewer shrimp and place in broiler-proof dish or place directly in dish. Drizzle 1 tblsp marinade over shrimp in dish.
Broil about 6 inches from heat source until prosciutto begins to crisp and shrimp are cooked through; watch closely to avoid burning - about 6 minutes!
Sprinkle with parsley.
Serve with a side salad.

ReplyDeleteWe have a little bakery in Farmington that sells it (Cannavina's), but the best type of Prosciutto is over at Caputo's in Salt Lake.
Lot's of different kinds and delicious.
Whole Foods might also carry it.
I know Albertson's has carried it as well. Not as good as Caputo's though!
I tried this recipe a couple weeks back...loved it...easy! Kept it simple, just wrapped it then placed on Foreman grill. Kids preferred it without the prosciutto, but with lots of lime after its grilled.
