Paleo Spice-Rubbed Chicken



This super-easy recipe can be adapted for oven roasting, but the instructions are for the crockpot - it makes life so much easier! Serve this dish with your favorite roasted or steamed veggie!


5-6lb free range chicken
1 sweet onion sliced into rings
2 tsp smoked paprika (regular will work fine)
1 tsp sea salt
1 tsp poultry seasoning
1 tsp garlic powder
1 tsp italian seasoning

Cover the bottom of crock pot with the onion rings. Mix your spices in a small bowl (add or delete any of the spices to suit your tastes!).




Rub the entire chicken with the spice mix and place the spiced chicken - breast side down - on top of the onions in the crock pot and that's it! No need for any liquid, since the chicken will great its own juices (yes, I'm serious!).



Cover and cook on low for 5-6 hours (depending on your crock pot). Once cooked, make sure to spoon the extra juices in the crockpot, over your chicken portions (I even spoon the liquid over my veggies).



(My kids were so anxious to dig into the chicken, they neglected the fact that I wanted to take a photo of the finished product - untouched!)
