This recipe is a hit at home, even with the fussy eaters in the family!
Thinly slice as many sweet potatoes as you wish to have on hand (I like to have leftovers for the convenience of my post-workout snack).
Arrange potato slices in a single layer on preheated baking sheet that has been brushed with olive oil (or coat with cooking spray). Sprinkle lightly with salt (or any preferred seasoning).
Bake in a 400 degree oven for 10 minutes, turn potato slices over; bake an additional 5 minutes. Depending on the cut slices, you may have to increase or decrease cooking time. Repeat procedure until all slices have been baked.
Add them to your meal, or simply have them as a snack!
