Paleo Banana Pancakes

1 banana, mashed

1 egg, lightly beaten

finely chopped nut of choice (I used pecans)

dash of cinnamon

dash of vanilla**(optional)

1/2 tsp - 1 tsp to taste of coconut chips/unsweetened shredded coconut (I used coconut butter)

Mix all ingredients in bowl (or puree lightly in blender/food processor) until thoroughly mixed and to desired consistency. Heat griddle or pan over med. heat, cook as you would a pancake. You can also do this with shredded apple. I used an overly ripe banana (the one nobody else will eat) and the pancakes were really sweet!

**Vanilla that is purchased in stores have sugar added to product, which would mean it's not entirely paleo. However, the amount used for this recipe is so small, I would personally not worry about it.
