2 whole eggs 1/2 c almond meal/flour 1/2 c coconut milk 1 apple cored and diced 2 tsp cinnamon 1 tsp vanilla 1 pint blueberries coconut oil for cooking
Combine all ingredients expect for blueberries in blender and blend. Pour into bowl and gently fold in blueberries. Heat a large pan on med. heat with coconut oil and pour about 1/3 c batter on to pan and cook 2-3 minutes. These pancakes tend to be difficult to flip, so when ready, jab the spatula under the pancake as fast as possible.
