Paleo Pancakes
2 whole eggs1/2 c almond meal/flour1/2 c coconut milk1 apple cored and diced2 tsp cinnamon1 tsp vanilla1 pint blueberriescoconut oil for cookingCombine all ingredients expect for blueberries in blender and blend. Pour into bowl and gently fold in blueberries. Heat a large pan on med. heat with coconut oil and pour about 1/3 c batter on to pan and cook 2-3 minutes. These pancakes tend to be difficult to flip, so when ready, jab the spatula under the pancake as fast as possible.
Maria, what would you think about leading a field trip to Whole Foods? Since I'm new here and to Paleo, it would help me to have a guide:). I know you are a busy lady so no pressure:)

ReplyDeleteYummy, I didn't have coconut milk, but was really suprised with the flavor, and I made my own almond meal/flour. It was a hit with the family too, ate them with out syrup which is a first. One meal at a time we are changing. Thanks!
