Crockpot Ease



2-3 lbs boneless, skinless chicken thighs (remove excess fat)
2-4 c chopped fresh tomatoes
choice of herbs (I used fresh basil, thyme and oregano and garlic powder, but you can use dried herbs also)

Place chicken thighs in crockpot and top with chopped tomatoes. Sprinkle with a generous helping of desired of herbs.
Set crockpot on low for 8 hours. Done!

I served with roasted broccoli and some strawberries. This recipe took absolutely minimal work and if you make enough, you can have leftovers for lunch the following day!
