Root Vegetables

Have you been thinking about cutting back on or even eliminating starches (rice, bread, pasta, potatoes) to see what kind of an impact it will have on your internal (insulin response, hormones, GI) and external (lean physique anyone?) health? Then think no more and do as the Nike ads tell you..."Just Do It!"
Replacing the potato is an easy way to start by using Rutabaga or Turnips (or a combination of both!). Try making mashed potatoes out of these veggies by boiling them in water and mashing them with some chicken broth and choice of herbs. Or, if you're not willing to go completely Paleo, try mashing veggies with warmed milk, 1 tsp of butter and a sprinkle of parmesan. YUM!

Try this paleo-converted recipe for an optimal meal:

Shepherd's pie - Traditional shepherd's pie has a mashed potato crust. I made my crust with rutabaga and turnip and also added in some roasted garlic cloves. Yum yum. Sautee your veggies in a pan (onions, celery, carrots are good choices - I like to add yellow sweet bell peppers) and then deglaze with beef stock or red wine. Add in some ground meat and brown. Add some herbs for flavor (sage is good) arrowroot if you want a thick gravy. Top with your mashed root veggies and bake @ 400 for 25-30 minutes or until bubbly!
