Leftover Chicken?
Quite often, I have leftover chicken that I like to use for quick and easy meals. Here's a tasty salad that does not require cooking over a hot stove during hot days. The farmers markets are a great source of fresh produce - if you haven't been to one, check it out! The flavors from that produce simply does not compare to store bought produce!
Chicken Salad w/ Peach & Walnut
2 large fresh peaches
2 cups chopped, cooked chicken meat
1/2 cup thinly sliced red onion
2 tomatoes chopped
1/3 cup favorite vinaigrette dressing (preferably homemade)
6 cups mixed salad greens
1/2 cup toasted walnuts
Chop 1 peach into 1/2 inch pieces; place in large bowl. Add chicken, onion and tomatoes; toss with enough dressing to coat. Add greens and walnuts to bowl and toss to coat. Mound salad on large plate. Cut remaining peach in thin wedges and place on top to garnish.
