Strawberry Salsa!



There are many variations and creations to this delectable recipe - use your imagination (or, if creativity isn't in your vocabulary, follow the examples provided below.)!

You can use this salsa as a topping for fish or chicken or delicious on its own for a midday snack. If you're Zone, you can make your own seasoned, baked flour tortilla "chips" and top with the salsa. Mmmm. (email me if you want to know how to make the chips)

Recipe #1:

1 c strawberries, chopped
1 c cucumber, chopped
handful of fresh mint
1/2 c red onion, chopped
fresh lime juice - to taste
a splash of extra virgin olive oil
freshly ground black pepper and sea salt

Wonderful over poached black cod.

Recipe #2:

1 c diced strawberries
1/2 diced tomato
1/2 diced red onion
1 finely diced jalapeno
juice & zest of 1 lime
a handful of fresh chives, chopped
a handful of fresh parsley & cilantro, chopped
salt & pepper
