Shrimp & Spinach Salad




Salads are rather simple to prepare and can include as many or as little ingredients as you want. I load mine up with plenty of protein (here, I use grilled shrimp) and vegetables.


In a bowl, mix together:
2-3 tblsp olive oil
3 tblsp lemon juice
3 tblsp lime juice
3 tblsp orange juice
minced garlic
chopped fresh cilantro
To the bowl, add 1-2 jumbo shrimp (amount depends on how many you are feeding) and toss to coat. Place on broiler pan and broil 3-4 minutes per side. Set aside.

In another bowl, toss together 1 lb baby spinach, chopped or thinly sliced red onion, crumbled feta cheese (omit if you are Paleo), dried cranberries, toasted sliced almonds (or any other preferred nut), cooked and crumbled bacon (nitrate free preferabale). Amount of each ingredient is up to you.
Mix together a balsamic vinegar dressing (you can also find bottled balsamic dressing with acceptable ingredients - especially at Whole Foods. Read the label) and pour over spinach and toss gently.
Top with shrimp.

  1. What a coincedence! I had shrimp salad tonight! I like the Newmans oil/vinegar dressing, no sugar added. I haven't checked the balsamic vinegar/olive oil flavor if sugars are added, but it's easy to buy the two...making sure there are no added sugars to the balsamic.

  2. That's great. You can also add a small amount of orange juice (1-2 tsp) and some grated orange rind to your portion of salad dressing to liven up the flavor.
