Simplicity



With so many families plagued by hectic schedules and limited time, it can be a struggle to find time to sit down together to eat dinner at home, let alone spend hours of prep work to prepare a meal. Although I enjoy cooking a variety of meals, I also know that there are days when we are pinched for time and I require a very basic and simple meal.

What about a meal that requires only THREE ingredients?

1. fresh bone-in turkey breast (cheaper than the boneless counterpart), skin on (skin is removed prior to serving but remains during cooking to retain all moisture)
2. olive oil
3. white or black peppercorn

Heat a cast iron skillet over med. high heat and sear turkey breast for a couple of minutes on each side until lightly browned. To finish, place turkey breast in 450 degree oven for 30 minutes and check internal temperature to ensure it reaches 160 degrees for safety. You can allow the turkey breast to rest for 15 minutes prior to serving.
During this waiting period, you have time to steam some kale and throw together a quick salad by mixing together greens, strawberries, raw walnuts, shredded carrot, olives and yellow bell pepper.
